Thanks to a rising quality in vineyards and desire to develop our wines, this new vintage was born. We wish by this wine to obtain a combined of fruit and wealth which brought us separately our previous 2 cuvées.
The blend is indeed local, it shows at once the variety of our vines and that of our soil: Carignan, Grenache Noir and Mourvèdre on schists limestone and marls.
This wine is fermented for three weeks then aged in barrels or large casks for 16 months according the vintage. This allows all the richness and the complexity of these concentrated grapes to come out. But the concentration is not our only worry. We need to know how to capture the volume and the freshness and achieve a balance with satisfies us.
Wines are vinified by soil, it is for us, the best way of letting them express themselves. Then they are blended in concrete tank. The material of breeding is essential, and its choice is going to depend on notes which we wish found in the wine. So, the concrete brings us a big freshness and sappy notes which we like so much.
